The Origin of Birria

Originated from Mexico, Birria is a delicious beef stew traditionally served at celebratory occasions. Preparation techniques vary, but our own Califas take on it is served with corn tortillas, a melted mix cheese blend, chopped onions, cilantro, salsa, and our beloved consomé. The meat is marinated in an adobo made of vinegar, dried chiles, herbs, and spices before being cooked in a broth, giving it a unique and flavorful taste. Restaurants or street carts that serve Birria are known as Birrierias and exist all throughout Mexico, especially in Jalisco, where it originates. Birria is an icon that is associated with the cultural identity of the people of Jalisco and Guadalajara.

Califas introduce the dish during their time as a pop up shop. Being featured at local places, like 13 Stripes Brewery and neighborhood festivals, Califas gained fast momentum in Birria Tacos and quickly saw a spike in demand across the Upstate.

Now, Califas has expanded their expertise beyond Birria Tacos to also include Birria Burritos, Birria Fries, Birria Grilled Cheese, Birria Tortas, Birria Empanadas and Birria Quesadillas. Doesn’t that just sound Heavenly Delicious?
